But generally it’s a very briny, “fresh” smell. When seafood is less fresh, it starts taking on that fishy, icky smell. Flavour varies greatly between species, and to a lesser extent within them. Crustaceans like lobster and crab tend to taste fairly sweet, with firm flesh.
